Extraordinary golden Fino, sourced from the Perez Barquero Bodega in Montilla - and this is concentrated dry wine is made from Pedro Ximenez, not Palomino!

94 Points - “The extraordinary NV La Bota de Fino 85 “Un fino que va para amontillado…” is not a wine from Jerez but from Montilla-Moriles in the province of Cordova, an appellation where the majority of vines are Pedro Ximénez and the wines produced are similar to Jerez wines. In fact, Amontillado means "in the style of Montilla," because the style originated there. This wine, from the same origin as edition 45 (and 24) that would be called Fino Amontillado if it wasn't forbidden, has taken biological aging under flor to an extreme, and the wine has started its oxidative aging on its way to becoming an Amontillado. 2,800 bottles were filled in December 2018.” - Luis Gutierrez (The Wine Advocate)

    A rare privilege

    Drinking a wine like this transports you into the astonishing living history of one of the worlds greatest and most underrated wine regions. Equipo Navazos are doing us all a favour by unearthing these treasures, exposing us to how thoroughly delicious and beguilingly complex Sherry can be. This dry Pedro Ximenez interwines the fading olive and saline echoes of a retreating flor with the emerging but still subtle nutty undertones that exposure to oxygen brings. The depth and elegance evolve and dance together beautifully over a few weeks of evolution in the bottle. Do yourself a favour.

La Bota de Fino nº 85 “Un fino que va para amontillado…” has been sourced from the oldest fino solera in Pérez Barquero’s Bodega Los Amigos: a total of 63 butts located in third row, of which we had the privilege to choose 15 that represent the current state of the solera. Seeking a distinctive character we opted for those butts that most clearly showed an incipient amontillamiento while preserving the fino character—as proved by its alcoholic content: 16%.


La Bota de Fino (Amontillado) number 85 is a fascinating wine, deep and elegant, as well as exceptionally versatile on the dinner table. Taken from the casks in October 2018 and bottled in December 2018, unfined and virtually unfiltered, its beautiful golden color is the one it exhibits straight from the butt.
