Description

Jaysen Collins, who is the eponymous JC, has gone awol here with a wacky blend of Chenin Blanc, Chardonnay, Crouchen and a couple other varieties from the Barossa, alongside Sauvignon Blanc and Pinot Gris from the Adelaide Hills.

All left on skins and stalks for 24 hours before wild fermenting in aged barriques. Bottled unfined and unfiltered but there is no wildness, just an array of flavours and textures to discover for yourself.

94 Points - "A beautiful, savoury-leaning, medium weight white wine of great charisma. Scents of candle wax, lemon balm, ripe apple and fudge. The palate is more lemony, creamy almost but for a cut of ultra fine tannin lending some chew and chalkiness. Flavours run long and the finish is this cavalcade of briny minerality, sweet spice and nutty savouriness. Wow. It’s just got so much going on. One for not drinking too cold. I’ve always been a fan of broader, more textural whites. Full bodied, a bit waxy, a bit oxidised. It gets me dreaming I’m on the beach in the south of France somewhere, sand between my toes, looking far more dashing than I am in real life. So, I’ve collected a selection of white grape varieties off old vines across the Barossa and knocked up a wine truly made for my taste.

So just like a freestyler, no form, no script - I thought I might let the grapes sit in the bin for a bit, maybe sleep on it for a day or two to see how it goes. I applied the same theory after ferment, let it freestyle on lees until it’s bottled. To build texture I just occasionally drove the barrels around my bumpy winery yard to mix up the light lees.

So, when in need a little escape from reality, a little glass of this will make me float away in my own little world.

Ordering

We want Different Drop customers to always be getting the best price. If you see a lower price elsewhere, just get in touch and we will sort it out for you. We handle all our price-matching on a case by case basis.

Some things to keep in mind: 

  • Retrospective price-matching is available for 30 days after you have purchased from us.

No, feel free to mix it up! There is no minimum requirement. You can order wines in any quantity or combination, 1 or 50+ bottles.

We stock three different sized gift boxes (single, three bottle and six), all are available for purchase for a flat rate of $8. They look great and make an awesome impression.

To add a gift box to your order, simply add at checkout. The special requests box is your friend, please give us as many details of what you are looking for and we will try our best, or get in contact to discuss it with you.

If you can't add more wine to your cart it means we are low on stock of that wine. For example, if you are only able to 3 bottles and no more that means we only have 3 bottles left of that wine. If it's a must have, please contact us and we may be able to order more in for you.
