Description

Nic Peterkin has taken his time to produce his own rendition of Margaret River's flagship red variety, Cabernet Sauvignon.

He was waiting until he found the right vineyard. In 2018, he found it.

This certified organic and biodynamic site in the northern end of the cape was unkempt and wild. The vines grew between free-roaming pigs and guineafowl, flowers and native weeds. With no herbicides or pesticides used, it was a veritable organic wonderland for Cabernet to grow and thrive.

Nic hand-harvested the fruit, individually hand selected the berries and bunches that would make the cut, then fermented the fruit in barrel and set it to age for about one year before release.

It's a very impressive wine - powerful and beautifully detailed. It feels like a coming of age wine for this vanguard WA producer.

For the L.A.S. Vino Cabernet, it was 100% worth the wait.

"Lots of sweet dark, black fruit with dark chocolate. Brooding and ripe. There’s intensity but also a certain lightness, effortless on the palate. Sweet core of stewed spiced currants and plums, sage, Chai tea, coffee, cola. And even though it reads sickly sweet, it’s not. It’s all well-balanced. Tannins are soft at first and then a bit sharp, but not unpleasant, volcanic pumice-type of texture. Excellent feeling. It’s long-lasting flavour, it’s very satisfying, it’s very good. The type of elegant sweetness, where there’s tension and structure to complement the ripeness of the fruit. Impressive stuff. And very tasty."

    Impressive!

    A very different Cabernet Sauvignon!

    It's a cabernet sauvignon with most hard structures removed, left with a fruity, middle-bodied, and solid texture. It was a pleasure enjoying the wine, best to go with food, in particular red meat.

    Serious Cab Sauv

    A big, deep and long Cabernet. Ideal to enjoy with a well cured O'Connor t-bone. Delicious fruit and spice combined in a nicely structured red. WA at its best.

A smooth, rich full bodied wine with dark rich fruit flavours of blackberry, blueberry strawberry and raspberry. Layers and layers of silky tannin through the extended maceration. A wine that can be put down for at least 10 years and comes into its own by decanting. A cabernet without comparison in Margaret River. Made with certified Organic and Biodynamic grapes

The fruit was hand-picked and cooled, followed by bunch and berry sorting by hand. This led to to an almost black caviar appearance of fruit in the fermenters. The fruit was naturally fermented as whole berries in large format barriques for 20-30 days. Plunged by hand and left to ferment at ambient cellar temperature with skins and seeds for 20-30 days prior to pressings directly back to the same barrels the wine fermented in. The wine matured for 13 months in barrique and 3 months in tank prior to bottling. No fining and a light filtration (vegan friendly).

L.A.S. Vino

Nic Peterkin’s blood runs red with Margaret River wine.

The son of Pierro founder, Dr Mike Peterkin and Shelly Cullen, of you guessed it, Cullen wines fame, the force is strong with this one. His wines are out there, challenging the status quo of one of the country’s most respected wine-producing regions. This is the “New Guard” of Margaret River, and the wines are coming out all guns blazing.

Nic is playing with some varieties off the beaten path of classic Margaret River. The Chardonnays and Chenin Blancs are stellar, as is the Cabernet but the likes of Touriga Nacional and Sousao all find a home amongst his eye-catching range.

There's some serious substance to his project, being named as the 2016 Gourmet Traveller Young Winemaker of the Year for his eclectic and tantalising releases and recently named the Dark Horse of the Year at the 2023 Halliday Wine Companion Awards. Nic is one of the most creative and boundary-pushing winemakers in the country, without question. His Margaret River range is truly unlike anything else you will find in Australia.
