Philippe Pacalet
A nephew of the famed Beaujolais winemaker Marcel Lapierre, Philippe Pacalet created his own negociant business in 2001. He currently operates out of the de Montille cellars in Beaune, an icy-cold building that's perfect for winemaking.
Pacalet likes to keep his technique simple so that there is nothing in the way of the terroir expressing itself fully – which is no surprise as his uncle is renowned for his natural wines.
As a negociant, Pacalet purchases his grapes from growers, rather than cultivating his own vineyards. He buys from meticulous growers who share his passion for low-intervention farming and manages to produce some shockingly good wines.
