Description

Shaun Crinion has long-wanted to 'make Yarra Cabernet cool again', and this beautiful wine certainly goes a long way to doing that!

It's a blend of Cabernet Sauvignon and Cabernet Franc, with the fruit coming from a 1981 Steels Creek vineyard in a warmer corner of the Yarra - perfect for these varieties. Wild yeasts and a portion of whole bunches adds some complexity and spice, with only old oak ensuring this stays fresh and light on its feet.

It's a delicious, elegant and typically seamless Dappled wine, and as always from Shaun Crinion, tremendous value. Very limited production, so get in quick.

Made from the Steels Creek Vineyard and grown by Simon Peirce, this vineyard was planted in 1981 and produces exceptional Cabernet Sauvignon and Cabernet Franc . The blend is 68% Cab Sav and 32% Cab Franc with 20% whole bunches included in the ferment. It's fermented with wild yeast and had 18months in old French oak barriques.

This variety is one that the Valley used to be widely recognised for and I’ve been wanting to bring it to life for some time.

TASTING NOTES

This is essentially a field blend with the Cabernet cropping a bit lower this year, so the Franc percentage is up. In cool years like 23’ the Cabernets blends have hauntingly fragrant aromas. Violet floras, raspberry, cassis and pencil shavings. This shows none of the green characters you may expect from a cool year, but instead more delicate pretty fruits. The palate is fine but flavoursome with lovely finesse and drive. Classic Yarra Cab! This will Cellar very well.

91 points - "Raspberry, redcurrant, blackcurrant, pencils, quite some perfume, but also capsicum and aromatic herbs, thyme in particular. It’s medium-bodied, redcurrant with a cranberry crunch to acidity, blackcurrant pastille, mint and sap, with some blood orange tang to acidity and a finish of good length. It’s kind of marginal in the ripeness department, but it does have energy. Pixelated tannin. Quite frisky, but good." - Gary Walsh (The Wine Front)

    Excellent structure with great ageing potential

    Medium bodied, bright forest fruits with a nice jammy quality, giving it some depth.

Dappled Wines

Dappled owner/winemaker Shaun Crinion has a mountain of winemaking experience from around the globe, culminating with the establishment of a label all of his own.

Shaun's focus is on expressing the sub-regionality of the Yarra Valley through simply gorgeous Pinot Noir and Chardonnay and a growing range of experimental wines.

With the combination of Shaun's A-grade fruit from the Yarra's top growers and his precise, astute winemaking, the value on offer in the Dappled range is second to none.

He was James Halliday's Best New Winery in 2018. The wines have only stepped in quality since then though the modest pricing remains the same. Unsurprisingly, his wines sell out in short order each year. He's now regarded as one of the best small-scale producers in the modern Yarra Valley.

We want Different Drop customers to always be getting the best price. If you see a lower price elsewhere, just get in touch and we will sort it out for you. We handle all our price-matching on a case by case basis.

No, feel free to mix it up! There is no minimum requirement. You can order wines in any quantity or combination, 1 or 50+ bottles.

We stock three different sized gift boxes (single, three bottle and six), all are available for purchase for a flat rate of $8. They look great and make an awesome impression.
