If you're a fan of the wines of Jura, then you're in for a treat with the Entropy Savagnin.

When winemaker Ryan Ponsford found the Savagnin vineyard, it was overgrown and the vines were suffering from disease. A lot of love and hard work was put in, and the end result is this captivating wine. With loads of acid giving it vibrancy, characters of nuts, cream and saline remind you of the oxidative wines of Jura. There's plenty of texture and the palate is smooth and mouth-watering.

Allow it to breathe for a while after opening and you'll be rewarded.

93 Points - "From twenty year old vines and a vineyard resurrected by winemaker Ryan Ponsford. It’s savagnin made in barrel and left untopped for its life pre-bottling, unfined and unfiltered.

"Rich and round, chiseled with chalky acidity and flinty minerality, green apple, quince, ginger and lemon tea, faint bergamot and lashings of fine, cashew nut savouriness. It’s got some boozy lift and breathiness to it, perhaps too much, but acidity is to task and whips things nicely into freshness despite a little cloying feel along the way. One to share with a group, I reckon, that boldness is apparent. That being said, a wine of immense complexity and gives good pause to reflect on and enjoy. Drink colder than thinking you should." Single Vineyard Savagnin from Willow Grove. 20yr old, north facing vines, own rooted and never irrigated. This vineyard site is beautiful but when I found it the vineyard itself was not. Overgrown with blackberries and vines dying back from trunk disease, It's been a fight to get it back into shape to say the least. The Blackberry label is ode to all the physical and emotional pain they caused and a reminder that the struggle can be worth it. 14% alcohol but with a PH of 3.1 (that means lots of acidity), this wine is a powerhouse. The wine was barrel fermented and left untopped for the year. It's Rich and saline, nutty and creamy but with loads of fruit character keeping it fresh and bright. Could drink now but will probably look it's best in a few months.

Entropy

Ryan Ponsford started his wine adventure with a pivotal bottle of additive-free Pinot Noir made by cult wine figure Bill Downie.

Not long after, Ryan found himself in Bill's vineyard, pruning, plucking, tending the vines and taking notes from Bill and his farming partner Pat Sullivan.

It wasn't long before Ryan jumped in boots and all and started his own label made with the same philosophy as the wines of Pat and Bill. Now he's bought a patch of dirt in Gippsland and is putting vines in the ground.

His journey is just at the beginning, but the DNA of what Ryan is planning is well and truly on the right track. Watch this space, there is plenty more in store for the 2022 Young Gun of Wine!

Ordering

We want Different Drop customers to always be getting the best price. If you see a lower price elsewhere, just get in touch and we will sort it out for you. We handle all our price-matching on a case by case basis.

No, feel free to mix it up! There is no minimum requirement. You can order wines in any quantity or combination, 1 or 50+ bottles.

We stock three different sized gift boxes (single, three bottle and six), all are available for purchase for a flat rate of $8. They look great and make an awesome impression.

To add a gift box to your order, simply add at checkout. The special requests box is your friend, please give us as many details of what you are looking for and we will try our best, or get in contact to discuss it with you.
