2021 L.A.S. Vino Cabernet Sauvignon

Nic Peterkin has taken his time to produce his own rendition of Margaret River's flagship red variety, Cabernet Sauvignon.

He was waiting until he found the right vineyard. In 2018, he found it.

This certified organic and biodynamic site in the northern end of the cape was unkempt and wild. The vines grew between free-roaming pigs and guineafowl, flowers and native weeds. With no herbicides or pesticides used, it was a veritable organic wonderland for Cabernet to grow and thrive.

Nic hand-harvested the fruit, individually hand selected the berries and bunches that would make the cut, then fermented the fruit in barrel and set it to age for about one year before release.

It's a very impressive wine - powerful and beautifully detailed. It feels like a coming of age wine for this vanguard WA producer.

For the L.A.S. Vino Cabernet, it was 100% worth the wait.

2022 Timo Mayer Cabernet Sauvignon

Whole-bunch ferments with Syrah and Pinot Noir, are very in vogue at the moment, but whole-bunch with Cabernet? Are you crazy?! Well, don't knock it 'til you've tried it...

Timo Mayer's Cabernet is 100% whole-bunch, the man does not do things by halves. The benefit here is that the tannins and textural elements of the wine can be derived from the stalks and seeds, as well as the skins, and it drastically reduces your need for a heavy oak influence to impart structure. Of course, this also means that the wine is fresher, more 'alive' in its youth, and doesn't require decades in the cellar to look the goods.

If this wine could talk, it would spruik you a Ginsburg poem, a little left of centre yet undeniably beautiful and thought-provoking all at once. Just try it, you might just fall in love with Cabernet in a way you never have before.

2022 Dormilona Clayface Cabernet Sauvignon

This is Josephine Perry's most exquisite version of Cabernet Sauvignon, the one that speaks most eloquently of her Wallcliffe vineyard in Margaret River.

This is Cabernet handpicked at perfect ripeness, foot-stomped and left to soak on skins for five months in amphora, then basket pressed and settled for a further three months in a large clay pot.

This is one of the purest examples of top-end Margaret River Cabernet you are likely to find. No additions bar a dash of SO2 to stabilise the wine in bottle. Courageous winemaking and whole-hearted trust in the quality of her fruit conspiring here into one of the region's most idiosyncratic and delicious Cabernet wines.

2022 Paralian Springs Hill Vineyard Cabernet Sauvignon

Charlie Seppelt and Skye Salter both love Cabernet, and 'claret' styles in general. The Whaite family, who own the Springs Hill Vineyard where they source their Shiraz, also had a block of Cabernet that was planted back in 1975.

And so, the lifelong dream of adding a Cabernet Sauvignon to their lineup was realised.

The wine has all of the hallmarks of the variety: blackcurrant, leafiness, graphite, and filled with heavenly aromatics. It's an elegant, refined Cabernet with fruit purity at the forefront. Divine stuff.

2022 Joshua Cooper Shay’s Flat Cabernet Sauvignon

Josh Cooper goes outside his Pinot & Chardonnay foundation with a Cabernet Sauvignon that is utterly delicious and extremely drinkable with a bit of time in the glass.

The source is the Shay's Flat vineyard in Landsborough in the Pyrenees. It spent 12 months in barrel before a further 4 months in tank to tighten it all up.

It's on the darker side of Cabernet, with cassis, chocolate and olive notes and some cedar and spice flowing through the palate, which is fine and detailed and not overbearing at all.

A wonderful Cabernet from one of the country's best young producers.

2022 Koerner The Clare

Elevated, elegant Clare Cabernets collab, and that's enough alliteration already.

The base of this wine is a classic Clare Valley varietal marriage of Cabernet Sauvignon, Malbec and Cabernet Franc, with a splash of Grenache, Carignan and Sciacarello. But contrary to what those varieties usually produce from the Clare, this is a lively, juicy red wine ready to be tucked into immediately.

It's the Clare Valley viewed through the eyes of two younger generation locals who want the wines of their home to be vibrant and accessible - and trust us, they are nailing their mission.

Ordering

We stock three different sized gift boxes (single, three bottle and six), all are available for purchase for a flat rate of $8. They look great and make an awesome impression.
