Description

Bull Swamp is where Pat gets his most powerful fruit, sourced from the oldest P58 clone plantings on a north-facing slope just outside Warragul. Planted in 1982, these dry-grown vines dig deep into rich volcanic soils that Pat reckons provide a unique "nourishment" and energy to the wine.

Because this site sits at a lower 100m elevation with less airflow than his other blocks, the fruit naturally leans into a richer, more concentrated profile.

The 2025 is a masterclass in balancing the natural Gippsland weight with drive. You get a complex nose of candied lime and lime leaf, and white peach, backed by a classic hazelnut note. Pat's classic winemaking here - 10 months in barrique with 30% new oak ensuring the wood supports rather than defines the final character of the wine. Vineyard first, as is Pat's philosophy.

The palate is firm and textured, carrying a pronounced saline, mineral edge that cuts through the richness. It’s a plush, mouth-filling white that finishes long and taut. We've always seen Bull Swamp as the "powerhouse" of the lineup, and this 2025 release feels incredibly complete and sure of itself.

96 points - "The 2025 Bull Swamp Chardonnay leads with a magnificent nose of almond meal, white peach, salted lemon rind, vanilla sponge and even a hint—the merest—of curry leaf. In the mouth, this is flinty, salty and electric in its acid line and creamy/mealy through the finish. This is a little bit of everything in one glass, and I absolutely love it. There's a rawness and openness to this wine that is compelling. 13.5% alcohol, sealed under screw cap.

Patrick Sullivan Wines: The Bull Swamp vineyard was planted in 1982 by the Farrington family on the very edge of the Warragul township (in Victoria, Australia, 102 kilometers southeast of Melbourne). The Bull Swamp Chardonnay comes from the oldest plantings of P58 clone on a north-facing aspect of the site. Deep, rich, volcanic soils nourish the dry-grown grape vines. The elevation is 100 meters, and this section of the vineyard receives the least amount of airflow relative to the other sites. The northerly aspect provides full sunlight and exposure, resulting in powerful, rich fruit. The fruit was hand-harvested into 15-kilogram baskets and transferred to the winery, then whole-cluster crushed into the press and drained off into tank for settling. Primary fermentation took place in barrique (30% new) over three weeks, followed by complete malolactic fermentation. Lees stirring occurred weekly until the completion of malolactic fermentation. Wonderful wine

A brilliant wine maker. This is a beautiful Chardonnay.
As good as any in Australia
My palate prefers the Ada river (same maker) but it is a close call . I love the minerality.
Looking forward to trying his other wines.

Very high standard cool-climate chardonnay

I was a bit blown away by this chardonnay, as well as it's sister 'Ada River' chardonnay. Superb example of cool climate chardonnay, with a cool austerity, perfect acidic poise and tension.

The Bull Swamp vineyard was planted in 1982 by the Farrington family in the

Patrick Sullivan

The wild-haired Patrick Sullivan is a farmer first, a winemaker second.

His pride and joy is his vineyard in the Strzelecki Ranges in the Gippsland G.I. of Victoria. On this plot of land, Pat farms with organic principals alongside Bill Downie, one of the most revolutionary winemakers of his generation.

Bill takes the Pinot Noir from the vineyard, Pat takes the Chardonnay. The Chardonnay wines emerging from his cellar are some of the most exciting in the country. Addicted to volcanic soils and the power and energy that those soils bring to Chardonnay, Pat is amassing a formidable stable of Chardonnays that articulate a small slice of Australia's ancient terroir.

The wines are un-tinkered with, fermented in neutral vessels with little or no sulphur and are made to express their special site and the vagaries of vintage. In Pat's words, "The wines are inspired by emotion, a moment in time and a sense of place."

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate
